Abstractdc.description.abstractEl amaranto es un pseudocereal que pertenece a la familia Amarantaceae. Amaranthus cruentus es una de las especies más usadas como alimento. El afrechillo de amaranto es obtenido durante la molienda del grano; esto corresponde a un residuo industrial formado por la capa externa del grano y el embrión, que es separado durante la producción de harina. El valor alimenticio y funcional del amaranto es más alto que la mayoría de los cereales, debido a su alta cantidad de proteína, ácidos grasos poliinsaturados, fibra dietética, tocoferoles, tocotrienoles y escualeno que participan en la prevención de la oxidación celular debido a su capacidad antioxidante. El amaranto, al contener algunos compuestos bioactivos, es muy conveniente para el desarrollo de productos alimenticios funcionales por su actividad antioxidante, hipocolesterolémica e hipoglucémica. Debido a las propiedades funcionales y la composición química del afrechillo de amaranto, la investigación tuvo como objetivo evaluar el efecto de dos tratamientos de purificación en el aumento de la cantidad de fibra dietética y la actividad antioxidante en un producto alimenticio intermedio (PAI). En la producción de los PAI, se usó afrechillo de amaranto de granulometría, 150 μm y 250 μm. Para la preparación del afrechillo, el grano de amaranto fue molido en un molino de rodillo, usando los tamices correspondientes, separando el afrechillo de la harina. Para un kilogramo de afrechillo, se usó alrededor de dos veces la cantidad en grano. El afrechillo de amaranto de dos granulometrías, fue caracterizado física y químicamente, antes y después de los tratamientos de purificación. Se realizó análisis de color, distribución del tamaño de partículas, densidad aparente, contenido de humedad, composición química proximal, azúcares totales y contenido de almidón, lisina total disponible, fibra dietética soluble e insoluble. De la composición proximal se puede mencionar que el contenido de proteínas en el afrechillo de 250 μm fue de 13,12 g/100g de afrechillo, levemente superior al de 150 μm donde se obtuvo un valor de 11,59 g/100g y el contenido de lípidos es relativamente bajo si se compara con otros cereales, obteniendo valores de 5,41 g/100g y 6,06 g/100g de afrechillo de 150 y 250 μm respectivamente. El afrechillo de amaranto fue purificado usando dos métodos que consisten en lavar el afrechillo sucesivamente con agua destilada, una solución de hidróxido de sodio y acetona, variando el tiempo de contacto, las concentraciones de los reactantes y la temperatura. Después de esto, los productos purificados fueron secados en estufa a 70 º C durante aproximadamente 12 horas. Los PAI producidos fueron guardados en condiciones de refrigeración. Para verificar la eficacia de los procesos de purificación, los PAI fueron caracterizados física y químicamente. La fibra dietética aumentó a 37,1 g/100g y la cantidad de fenoles totales se redujo a 0,2902 mg EAG/g afrechillo. Los resultados mostraron que ambos métodos de purificación son eficaces para obtener un PAI con alto contenido de fibra dietética, sobre todo insoluble, pero con un contenido bajo de fenoles totales y una cantidad imperceptible de lisina disponible y de la actividad antioxidante, causada por el lavado con solvente de los afrechillos durante el tratamiento.es_CL
Abstractdc.description.abstractAmaranth is a pseudocereal belonging to the Amarantaceae family. Amaranthus cruentus is one of the species most used as food. Amaranth bran is obtained during grain milling; it corresponds to an industrial residue formed by the external layer of the kernel and the embryo, which are separated during flour production. Nutritional and functional value of amaranth is higher than most of cereals, due to its high amount of protein, poly unsaturated fatty acids, dietary fiber, tocopherols, tocotrienols and squalene which participate in prevention of cellular oxidation because of their antioxidant capacity. Amaranth, having some bioactive compounds, is very suitable for functional foods development since its antioxidant, hypocholesterolemic and hypoglycemic activity. Due the functional properties and the chemical composition of amaranth bran, the research had as aim the purpose of evaluate the effect of two purification treatments in order to increase the amount of dietary fiber and antioxidant activity in an intermediate food product (IFP). In IFPs production, amaranth bran of to particle size, 150 and 250 μm, were used. For the bran preparation, amaranth grain was milled in a roller mill, using the correspondent sieves, and thus separating bran from flour. For one kilogram of bran, about twice of grain was used. Amaranth bran of two particle size, were physically and chemically characterized, before and after the purification treatments. There was realized analysis of color, particle size distribution, apparent density, moisture content, proximate chemical composition, total sugars and starch content, available lysine total, insoluble and soluble dietary fiber. Of the composition proximal it is possible to mention that the content of proteins in the bran of 250 μm was of 13.12 g/100g of bran, slightly superior to that of 150 μm where a value of 11.59 was obtained g/100g and the content of lipids is relatively low if it is compared with other cereals, obtaining values of 5.41 g/100g and 6.06 g/100g of bran of 150 and 250 μm respectively. Amaranth bran was purified using two methods which consist of washing the bran successively with distilled water, sodium hydroxide solution, and acetone, varying the contact time, the reactants concentrations and temperature. After that, purified products were dried in an over at 70ºC for approximately 12 hours. IFPs produced were kept under refrigeration conditions. To verify the effectiveness of the purification processes, IFP were physically and chemically characterized. Dietary fiber increased to 37.1 g/100g and amount total phenolics decrease to 0.2902 mg EAG/g bran. Results showed that both purification methods are effective to obtain an IFP with high dietary fiber content, especially insoluble, but with a low content of total phenolics and an undetectable amount of available lysine and antioxidant activity, caused by washing with solvent of bran during processing.en
