Protected areas are key geographic locations for conservation of nature over time. These areas have conservation goals, which are achieved through a set of programs and management activities gathered in a management instrument called management plan. In the present study the administrative, ethical- philosophical, scientific and political basis of the existence of protected areas were analyzed. Subsequently the guidelines, structure and requirements for the development of a management plan were established and finally the proposal was applied and exemplified in the Nature Sanctuary Pumalín Park, located in the region of Los Lagos, Chile. The existence of protected areas was analyzed and discussed based on a literature review of the ethical- philosophical, scientific and political- administrative foundations, with emphasis on the Chilean case. Different reasons that justify the establishment and declaration of areas for in situ conservation were identified, which are reflected in the management objectives of the management categories of protected areas declared by the International Union for Conservation of Nature (IUCN). To establish the structure and requirements of a management plan, the National Forestry Corporation (CONAF) method of Chile, the Conservation Management System (CMS) method from England, and the General Management Plan (GMP) method from U.S. were analyzed. These methodologies were evaluated according to the IUCN management plans guidelines. Among the methodologies discussed highlighted the CMS, which was used as the basis for the developed proposal. The structure and the requirements proposed mainly consist in defining an overall objective of the area, identifying targets, and management, monitoring, record keeping and administrative projects. The proposal applies to public and private areas, allowing adaptive management, and suggests the integration of different management initiatives. The strategy for developing the management plan for Pumalín Park was designed based on the CONAF methodology (under the logic of the donation of the area to the state system) and based on the methodology proposed in the study. A management project for the larch tree (Fitzroya cupressoides) was developed....

As an alternative to reduce the consumption of foods with high content of saturated fats, this study was proposed, whose main objective was the development and application of a fat substitute from pork skin in longaniza and cooked salami, maintaining the sensory characteristics of the products. A central rotational experimental design composed of the factors amount of fat substitute and concentration of carrageenan-alginate (1:0,6g) as a stabilizing additive of the fat substitute was carried out. As design responses, the sensory parameters of quality and instrumental hardness were used, each one was analyzed separately to perform a joint optimization maximizing the responses. The optimized product was characterized by proximal analysis (AOAC,1990), fatty acid profile by means of the AOAC 996.06 method and comparative sensory profile using as a control the base product without substitution. The optimal replacement values in cooked salami were 75,2% bacon, with an additive amount of 0,06 g in 100 g of product. The optimum sample of salami decreased 61% of the fat, and 42% the amount of calories. In addition, showed a lower amount of visible fat particles and a lower intensity of fat flavor than the control sample (p≤0,05). Optimized salami obtained less than 4 g of fat in 100 g of product, it does not have the "HIGH IN SATURATED FATS" stamp on its labeling. For longaniza, the 70/30 milled pork (70% pork / 30% fat) replacement was only 0.67%; with 1.22 g of additive in 100 g of product. Additionally, a larger replacement was studied to determine the amount of fat substitute, which maintained an even acceptable sensory quality (over 7 on a 9-point scale) for color and appearance, according to the desirability model in joint optimization, reaching a 26% substitution of milled 70/30 pork, this formula would not have the seal "HIGH IN SATURATED FATS" in the labeling...

The purpose of this research is to analyze the risk management in areas of urban-forest interface of the city of Valparaiso, Chile, and its impact in socioeconomic, territorial and environmental terms, from the Mega-Fire, which took place in April 2014. A diagnosis is made to analyze the impact that, as underlying factors, the presence of irregular settlements, microbasins, plantations and forest vegetation, as well as the existing planning and regulation instruments in the level of risk and increase of damage in these zones. The results determined the need to integrate the risk component into territorial planning, legislation and control for effective regulation in the interface areas; develop and strengthen the capacities, competencies and leadership of the communities to reduce their vulnerability, as well as improve public-private coordination with all the actors involved in the problem. Finally, to obtain a quantitative measure to evaluate and determine the changes that the GR has experienced since the Mega-Fire to date in the city, a methodological approach was used, using indicators to obtain the Risk Management Index (RMI) considering four components of public policy: risk identification, risk reduction, disaster management and governance and financial protection....
