Lipids oxidation is an important cause of alteration in the food quality, leading to a loss of chemical and nutritional qualities. The antioxidants as flavonoids can be used to prevent the lipid oxidation. However, they have a low stability because of environmental factors and limited solubility in lipid systems. The encapsulation technology would allow the protection and the control release of flavonoids. An alternative to design flavonoids microparticles with antioxidant properties in lipid medium is by encapsulating flavonoids into lipid-insoluble polymer and the incorporation of a channelizing agent that allow the gradual release of flavonoids in bulk lipid. In this context, the object of this research was to study the kinetic and the mechanism of epicatechin (E) release in hexane and methyl linoleate (ML) from microparticles with inulin and with and without channelizing agent (SPI). Microparticles of epicatechin with inulin as encapsulating agent and soy protein isolate as channelizing agent were obtained by spray drying E-(In-SPI). A Box-Behnken experimental design was used, with 15 runs. The E/inulin ratio (1:20-1:50), the percentage of channelizing agent (0-25%) and the inlet air temperature (120-160°C), were evaluated as independent variables. The response variables were the encapsulation efficiency and the E release in hexane at 14 days of storage (t14). The response superficial methodology (RSM) was used to optimize the dependent variables. In the microparticles obtained under optimum conditions (1:50, 2% SPI and 160°C) for the system E-(In-SPI), an increase in encapsulating agent (inulin) content improved the encapsulation efficiency. In order to achieve the proposed objective microparticles of epicatechin were prepared under optimal conditions, without channelizing agent (E-In) and with channelizing agent (E-(In-SPI). Both systems of microparticles were stored in an oven at 30°C to study the E release in hexane and methyl linoleate by 145 and 90 days, respectively. The data were fitted to Peppas, Higuchi and Hixson-Crowell mathematical models. For both, E-In and E-(In-SPI) systems, a biphasic behavior was observed in the release profile graph of E in hexane. On the other hand, in ML there was only superficial flavonoid release. The low release of E in hexane and methyl linoleate can be attributed to the low solubility of epicatechin in the medium and/or to the high epicatechin-inulin interaction, due to that both parameters could influence the diffusion of E. The release mechanism of E in hexane for the microparticles without channelizing agent agreed with non-Fickian or anomalous diffusion where different mechanism such as diffusion and relaxation of the chains of the polymer can occur at the same time. In contrast, in the microparticles with channelizing agent, the release mechanism of epicatechin corresponded to a Fickian diffusion. This same release mechanism of E was observed in methyl linoleate, for the microparticles with and without channelizing agent. Consequently, the results obtained from the release kinetic from microparticles are fundamental to define their application in foods. In this study, the release rate constant of E was slow, in both hexane and methyl linoleate, suggesting that the epicatechin encapsulation is a technique that can be applied to improve the stability and extend the shelf life of edible oils...
