Efecto del genotipo y del peso de sacrificio sobre los principales subproductos del faenamiento de ovinos machos en la región del libertador Bernardo O’higgins

Abstract

Se estudió el efecto del genotipo y peso vivo al sacrificio, y sus respectivas interacciones sobre los principales subproductos ovinos. Se utilizó una base de datos recopilada de ocho memorias cuyos resultados fueron obtenidos durante el mismo año y temporada, en las cuales se utilizaron 280 ovinos machos de ocho genotipos distintos (Poll Dorset, Merino Precoz, Suffolk Down, Cuádruple x Cuádruple, Dorset x Suffolk Down, Texel x Cuádruple, Texel x Suffolk Down y Texel) distribuidos al azar en cuatro grupos por peso de sacrificio: 25, 29, 33 y 37 kg. Previo al sacrificio y posterior a éste, y a la obtención de las canales se registraron los siguientes pesos: peso vivo de sacrificio, sangre, 4 patas, cuero, digestivo lleno, digestivo vacío, pulmón y tráquea, corazón, hígado, bazo, riñones, cabeza, pene y testículos. Los resultados determinaron diferencias significativas (p ≤ 0,05) en el peso y porcentaje de la mayoría de los subproductos a excepción del peso del corazón y pulmones, y del porcentaje del hígado y del corazón por efecto del genotipo. En cuanto al efecto del peso de sacrificio sobre los principales subproductos, los resultados indicaron que éste afectó el peso de todos los subproductos. También se observaron diferencias significativas (p ≤ 0,05) en la mayoría de los porcentajes de los subproductos, a excepción del bazo y el cuero. Por lo tanto, de acuerdo con estos resultados, se puede concluir que la mayoría de los subproductos fueron modificados por efecto del genotipo y el peso vivo de sacrificio

The objective of this study was to determine the effects of genotype and slaughter weight and their interactions on fifth quarter of lambs. It was used a database compiled from eight thesis whose results were obtained during the same year and season, in which two hundred eighty males lambs from eight different genotypes (Poll Dorset, Merino Precoz, Suffolk Down, Cuádruple x Cuádruple, Dorset x Suffolk Down, Texel x Cuádruple, Texel x Suffolk Down y Texel) were used, distributed randomly into four groups by slaughter weight: 25, 29, 33 and 37 kg. Prior to slaughter and after this, and the obtaining of the channels the following weights were recorded: empty live weight of sacrifice, blood, 4 legs, leather, full digestive, empty digestive, lung and trachea, heart, liver, spleen, kidneys, head, penis, and testicles. The results determined significant differences (p ≤ 0,05) in the weight and percentage of the majority of the sub products, except for the weight of the heart and lungs, and the percentage of the head, liver, and heart by effect of the genotype. Regarding the effect of the slaughter weight on the main sub products, the results indicated that this affected the weight of all sub products. Significant differences (p ≤ 0,05) were also observed in most of the percentages of sub-products, except for the spleen and leather. Therefore, based on these findings, it can be concluded that most of the sub products were modified by effect of genotype and the live weight of sacrifice
