The quínoa is a pseudocereal that is characterized by it´s content of essential aminoacids, being one of the grains that presents a major content of proteins and of unsaturated fatty acids and a minor content of carbohydrates. Nowadays, the non transmissible chronic diseases (NTCD) have a high frequency in Chile associated to a poor balanced and healthy diet, diverse risk factors and for the natural aging of the adult population. The consumption of proteins helps to keep a balanced diet at a cellular level, particularly in retired adults who already have associate NTCD and / or risk factors. The developing of the drink - gel produced from quínoa flour has as an aim to include these nutritional needs, especially to retired adults who have swallowing, malnutrition or even dry mouth problems, due to its consistency of easy consumption. The product was formulated from quínoa flour, water, potassium sorbate, citric acid, flavor and water. The formula was optimized by means of Surface Method of Response (SMR) with 4 points and triple center, through of texture characterization of maximum Force (N) and Elastic Force (N). The nutritional content was made with FAO nutritional table and following the legislation indicated on Food Health Regulations (FHR) on its article 115th, obtaining for every 100g of finished product an amount of 50 Kcal, 2,3 g of proteins that represent 4,6% of RDA to adult person, 26 mg of potassium and 0,7 g of fiber. The physicochemical characterization of the product was Fmáx 0,61±0,17 (N); Deformation in Fmáx 49,25±0,94 (%); pH 5,27±0,21; ρ 3,9±0,2 (g/mL); aw 0,97±0,00; soluble solid 13±0 (%) and acidity 5,53±0,9 ml NaOH 0,1N. The useful life was determinated by quality valuation by Karlsruhe table and by microbiological deterioration, obtaining 9 final days by growth out of regulation of Total Plate Count (TPC). Sensory evaluation with consumer acceptance determined average acceptance of 4,8 in 7 points scale which is "like slightly" being the residual bitterness the main attribute to improve....

Determinación de factores condicionantes para la implementación de buenas prácticas de fabricación en restaurantes de Santiago

A significant amount of foodborne diseases (ETA), occur every year in the world, causing serious problems to the health of the population and in some cases, death. For this reason, food safety is a key concept in establishments where food is stored, prepared and distributed, such as restaurants. The main objective of this research is to determine the impact of the educational level, the training in food safety and the culinary characteristics of the preparations, together with the price in the implementation of GMP. For this reason, data was collected, applying a list of GMP verification and tests to food handlers, to measure their level of training in 70 restaurants in the commune of Santiago and nearby municipalities. The results indicate that 41, 4% of the restaurants inspected, failed the GMP checklist and the average of compliance among the 70 restaurants was 67.7%. The educational level of the manipulators indicates that 45%, have incomplete higher education and the average of scores among all manipulators was 5.6. In the conditioning factors that influence the implementation of GMP, the level of training of the manipulators and the educational level are discarded, since no correlation was found between these variables,(correlation index: 0,05 and 0,108, respectively). Regarding the price of the dish, significant differences were found between the restaurants that approved and did not approve the checklist (p-value: 0.0047). Regarding the incidence of culinary preparations in the implementation of GMP, mexican restaurants have a higher level of compliance and present significant differences with arabic food (p-value: 0, 02) and peruvian food (p-value: 0, 03.
