IBD consists of a group of inflammatory diseases that include the small intestine and colon. The main ones are UC and CD. The causes of this disease are still unknown, with diet playing an important role in the development of this disease. One of the alternatives for its treatment is the use of phenolic compunds which have anti-inflammatory, anticancer and antioxidant properties. Murta corresponds to an endemic shrub species that grows in southern Chile, contains anti-inflammatory properties and has been used to treat diabetes. The aim of this study was to find de best solvent mixture for the greatest obtaining of flavonoids and anthocyanins quantified by HPLC and the greatest antioxidant capacity by ORAC and ABTS. Extracts were made with three solvents (Ethanol, Methanol and Acetone) at concentrations of 50 and 80% in water, which were characterized by yield (%), flavonoid content (mg eqquercetin- 3-glucoside/g d.m) and anthocyanins content (mg eq-cyanidin-3-glucoside/g d.m) and antioxidant capacity by ORAC (umolTE/g d.m) and ABTS (%) method. There were no significant differences for yield, the values were between 28-39%. Regardind flavonoids and anthocyanins, the highest value was obtained wirh 50% methanol, with values of 2,44 mg eq-quercetina-3-glucóside (ml and 0,17 mg eq-cyanidine-3-glucósido/ml with no significant differences between the three solvents. For antioxidant capacity, there were significant differences for ABTS, the best value was obtained with 80% acetone. ORAC had no significant differences but the highest value was 317 umol TE/g d.m for 50% ethanol. In conclusion, an extract with a high antioxidant capacity and high content of anthocyanins and flavonoids could be obtained with the three solvents under study, with 50% ethanol being the one that obtained de highest value in antioxidant capacity....
