Monografía: usos de los huevos de descarte de gallinas como ingredientes funcionales, nutritivos y tecnológicos en alimentación

Abstract

En la cadena productiva de los huevos se presentan pérdidas que generan los huevos de descarte. A nivel mundial, se estima que entre un 12-20% de la producción total de huevos se pierden. Esta cifra es muy alta y por esto se considera necesario atribuirle algún uso alternativo a estos huevos. Así, el objetivo de esta monografía fue recopilar información actualizada sobre cifras en Chile de huevos de descarte y sus posibles usos para convertirse en ingredientes funcionales, alimenticios o tecnológicos para alimentación animal o humana. Con el fin de cuantificar las cifras de huevos de descarte en Chile y sus usos, se realizaron encuestas a productores y comerciantes a nivel nacional. Se recopiló información acerca del uso de los huevos de descarte en el mundo y de los productos elaborados en base a huevos de descarte. Finalmente, se seleccionó la parte del huevo menos utilizada y se plantearon posibles alternativas de re-utilización. En Chile a nivel de granja se desechan un 2,8% de los huevos producidos y a nivel de comercio un 3,6%. No se obtuvieron datos de las pérdidas producidas a nivel de transporte. Pocos productores de huevos estaban al tanto de la posible re-utilización de los huevos de descarte. A nivel nacional los usos que se le dan a los huevos de descarte son en alimentación animal y la fabricación de huevos procesados (huevos o partes de éste pasteurizados, harinas, coagulados, etc.). A nivel internacional existe más información sobre diferentes usos de éstos huevos (bioplásticos, biogas, implantes, ingredientes funcionales con características antioxidantes, antimicrobianas, antihipertensivos y otras). Finalmente, se seleccionó la cáscara para proponer su reutilización ya que se desecha en su totalidad. Se sugirió su reutilización en todos los niveles productivos de Chile (pequeño productor, mediano y grande). La forma de re-utilizar la cáscara podría ser la extracción del carbonato de calcio para utilizarse en diversos productos como nutracéuticos, fertilizantes, suplemento alimenticio, entre otros. In the production egg’s chain there are discard eggs loss-making. Worldwide, it is estimated that between 12%-20% the total production of the eggs gets lost, that figure is very high and because of it thinks that it is necessary to give use to these eggs, well. Internationally there is more information about the uses of the discard eggs (Plasmatic, biogas, implants, functional ingredients with antirust, antimicrobial characteristics, antihypertension ETC). Finally the egg shell was selected because is totally discarded it was suggested reuse in whole Chile production level (Small producer, medium and big producer). The way to reuse of the egg shell is the extraction of calcium carbonate to use in different products like nutraceuticals, fertilizer and food supplement inter alia.
