Different strategies have been applied to avoid the phenomenon of fat bloom that affects the quality of the chocolate. The tempering process is a controlled pre-crystallization technique used to induce the most stable solid polymorphic form of the cocoa butter and thus prevent the efflorescence of the cocoa butter. It consists of shearing the mass of cocoa at controlled temperatures to promote the crystallization of triacylglycerides of cocoa butter and achieve a good adjustment of the characteristics of brightness, snap (sound when splitting), contraction, avoid migration of fat (fat bloom) and extend the shelf life of chocolate. The aim of this work was to standardize the manufacturing process (Good Manufacturing Practices (GMP)) of chocolate tempering, study its effect on sensory, thermal, and color properties for the achievement of a quality product. Three tempering processes were used, varying the cooling and final temperatures, to induce the nucleation of stable polymorphic forms with formation of a three-dimensional structure of crystalline network that influences the sensory, thermal and color properties in chocolate, and were compared with the tempering process provided by the supplier to produce bars that are considered optimum. The evaluation of the chocolate quality was carried out by analysis of thermal properties (melting profile, maximum melting peak, solid fat curve in function of temperature, enthalpy of fusion) by Differential Scanning Calorimetry (DSC), perception of color (CIE L*a*b*) and sensory analysis with trained panel in chocolate descriptors. The thermal results indicated that the stable crystals and more desirable polymorphic form in chocolate were developed after correct tempering and subsequent storage for 31 days at room temperature. The sensory evaluation showed that the sample with the lowest fat bloom was the one treated with Tfa 32, which is consistent with the whiteness index, given that the Tfa 32 was the one with the lowest value of the three. In addition, the company Puro Chocolate SpA that made chocolate based products, seeks to develop an efficient quality management system to follow the growing trend towards the globalization of world trade. With this objective, a prerequisite program was designed. An increase from 46 to 98% of the checklist approval was achieved. In spite of the investigations, a solution has not been found to avoid the phenomenon of efflorescence of the fat in the chocolate that affects the final quality.
