Aspectos agronómicos y económicos del cultivo del lúpulo para elaboración de cerveza y otros usos

Abstract

La presente monografía tiene como propósito compilar y sistematizar información técnicocientífica sobre los aspectos agronómicos y económicos del cultivo de lúpulo (Humulus lupulus L.), con énfasis en su uso para la elaboración de cerveza y otros productos. La motivación principal surge del creciente interés en Chile por este cultivo, impulsado por la expansión sostenida del mercado cervecero artesanal y la necesidad de contar con documentación integral que oriente a productores y técnicos del rubro. El objetivo general fue elaborar un manual que aborde de forma ordenada y comprensible los elementos históricos, agronómicos, químicos y económicos vinculados al cultivo del lúpulo, tanto a nivel nacional como internacional. Como objetivos específicos se buscó sistematizar información sobre aspectos históricos de la producción de lúpulo a nivel mundial y nacional, sistematizar la información referente a aspectos agronómicos productivos del cultivo del lúpulo, generando un manual productivo y sistematizar información económica del establecimiento del cultivo del lúpulo y aspectos de comercialización y oferta a nivel mundial y nacional. El trabajo se desarrolló mediante una revisión bibliográfica exhaustiva en bases de datos académicas, literatura especializada, documentos técnicos y entrevistas a expertos. Además, se aplicó una encuesta a productores nacionales. La información se organizó en dos grandes áreas: (i) fundamentos agronómicos y económicos del cultivo, y (ii) composición química y variedades de interés cervecero. Los principales resultados indican que el lúpulo es una especie perenne, dioica y de alta exigencia agronómica, que requiere condiciones específicas de clima, suelo, fotoperiodo y manejo técnico. Se identificaron variedades adaptadas a distintas regiones, métodos de propagación, sistemas de conducción, prácticas de riego y nutrición, así como estrategias para el control de plagas y enfermedades. Además, se analizaron los costos de establecimiento, rendimiento por hectárea, modelos de comercialización y proyecciones del mercado nacional e internacional. Se concluye que Chile posee un potencial productivo significativo para el cultivo de lúpulo, especialmente en zonas con condiciones agroclimáticas favorables. No obstante, su desarrollo sostenido dependerá del acceso a material vegetal certificado, la capacitación técnica de productores, la articulación comercial y el fortalecimiento de redes asociativas. La información recopilada en esta memoria busca contribuir a una base técnica sólida que respalde la toma de decisiones agronómicas y económicas en torno a este cultivo emergente.

This monograph aims to compile and systematize technical and scientific information on the agronomic and economic aspects of hop (Humulus lupulus L.) cultivation, focusing on its use in beer production and other applications. The main motivation stems from the growing interest in Chile in this crop, driven by the continuous expansion of the craft beer market and the need for comprehensive documentation to guide producers and technical professionals. The general objective was to develop a manual that presents, in an organized and accessible way, the historical, agronomic, chemical, and economic aspects related to hop cultivation, both nationally and internationally. The specific objectives were to systematize information on the historical aspects of hop production at both global and national levels; to systematize information related to the agronomic and productive aspects of hop cultivation, generating a practical production manual; and to systematize economic information regarding the establishment of hop cultivation, as well as commercialization and supply aspects at both global and national scales. The study was conducted through an extensive literature review, including academic databases, specialized publications, technical documents, and expert interviews. Additionally, a survey was conducted with national hop producers. The information was structured into two main areas: (i) agronomic and economic foundations of hop production, and (ii) chemical composition and varieties of brewing interest. The main findings show that hops are a perennial, dioecious species with high agronomic requirements, needing specific conditions in terms of climate, soil, photoperiod, and technical management. Adapted varieties for different regions were identified, along with propagation methods, trellising systems, irrigation and fertilization practices, and strategies for pest and disease control. Furthermore, the study analyzed establishment costs, yield per hectare, marketing models, and both national and international market projections. It is concluded that Chile has significant productive potential for hop cultivation, especially in areas with favorable agroclimatic conditions. However, its sustainable development will depend on access to certified plant material, technical training for producers, commercial integration, and the strengthening of associative networks. The information compiled in this thesis seeks to provide a solid technical foundation to support agronomic and economic decision-making related to this emerging crop.
