Durante los últimos años, Chile se ha posicionado en los primeros lugares en índices de sobrepeso y obesidad, alcanzando un 74% el año 2019, liderando el ranking de la OCDE. Considerando estas alarmantes cifras a nivel país y sus consecuencias a la salud, se detectó la oportunidad de ofrecer un servicio integral, que satisfaga la necesidad de lograr llevar una vida saludable, invirtiendo el menor tiempo posible. Para validar esta oportunidad, se realizó una investigación de mercado, la que mostró dentro de sus principales conclusiones que un 94,4% considera beneficioso tener más actividad física; un 56% dispone de poco tiempo para hacer ejercicio; un 88% quiere comer de forma saludable y que un 39,2% pagaría por un servicio. Chef & Trainer aborda esta oportunidad con una propuesta de valor dirigida desde el segmento C1b hasta el AB en el sector oriente de Santiago. Cuenta con una estrategia competitiva de Enfoque con Diferenciación y una ventaja competitiva, ofreciendo un servicio único de chef y personal trainer, todo en uno y a domicilio. Esto, basado en un plan alimentario creado por nutricionistas, otorgando una experiencia innovadora y de excelencia, que permite ahorro de tiempos, al no contratar los servicios por separado. Tras la evaluación del proyecto se concluye que se requiere una inversión inicial de $19,4 millones de pesos y un capital de trabajo el primer año de $22,3 millones. El plan de negocio presenta interesantes proyecciones de utilidades sobre ventas de 24% al cuarto año, y al quinto un VAN de $77,8 millones y una TIR de 40%, con una tasa de descuento de 14,57% y un payback a 3,3 años. El análisis de sensibilidad considera que incluso una baja de 20% en los ingresos no afecta la factibilidad del proyecto. En resumen, se detecta una necesidad no resuelta, con demanda creciente y riesgos mitigables, avalada por los estudios de la Industria, Competidores y Clientes, los cuales refuerzan la oportunidad. Food, its derivatives, its composition and preservation are essential for the development of the vital functions of humans. The dehydration is a technology for food preservation which consists of reducing by heat the quantity of liquids, mainly water present in fresh or processed foods. Drum drying is a clear example of this process, where dry and easy to rehydrate porous products are obtained. This technology is used mainly for viscous products that form films of different thickness. Sugar is chemically known as sucrose and corresponds to a carbohydrate that provides 4 kcal / g to our body and is currently used as an ingredient in most of the foods we consume, such as beverages, sweets, ice cream, cakes, etc. The general interest of the food market is to reduce sugar consumption by replacing it with another nutrient or raw material that comply with the technological function it has in each case. The purpose is to reduce sugar consumption and thus improve the health of the population around the world. Diana Food is an international company that specializes in Chile among other technologies; in dehydrated products in Powder, Flakes or Crunchies, the latter characterized by having added sugar or some other sweetener. All of these products come from fruits or vegetables dehydrated by drum drying. Information regarding the Crunchies produced by Diana Food is scarce, as is the replacement of sugar on these products. The objective of these research was to study the behavior of different natural sugar substitutes in the company's Standard Crunchies products and identify the impact of this replacement on drying parameters, film formation, moisture of the final product, color, flavor, etc. The proximate analysis of different raw materials mainly fruits was investigated for the drying experiments. The selected raw materials achieve criteria such as: proportion of sugars with respect to dry matter in a percentage higher than 45%, price and others. A recipe for the company's Standard Crunchies was chosen and 100% of the sugar in the recipe was replaced with the selected raw material. The chosen fruits go through processes before drying, such as: peeling, crushing, weighing and finally they are added to the mixture with the base fruit pulp of the product to be elaborated. Each mixture is dried on the drum dryer, adjusting the drying parameters if it is necessary. The results show that the fruit with the greatest potential for the preparation of Sugar-free Strawberry Crunchies is the Apple and for Sugar-free Apple Crunchies is the Coconut Drink. Both samples produce a stable drying film during the drying operation and achieve products with a crunchy texture, rough appearance and a hardness similar to the objective product. In addition, the target moisture and thickness parameters are achieved and following the sensory evaluation criteria, these added raw materials have little influence on the final product, so the result is similar in several respects to the proposed standard. The proximal analysis for the Strawberry Crunchies showed a decrease in the amount of energy respect to the standard between a range of 34.5 and 141.7 kcal per 100 grams of product, it was additionally achieved a decrease in the amount of sugars totals with respect to the standard between a range of 13.4 and 27.9 grams per 100 grams of product. In the case of Apple Crunchies, the proximal analysis showed a decrease in the amount of energy with respect to the standard between a range of 54 and 84.8 kcal per 100 grams of product, additionally a decrease in the amount of total sugars with respect to to the standard between 3.2 and 3.3 grams per 100 grams of product...

Determinación de factores condicionantes para la implementación de buenas prácticas de fabricación en restaurantes de Santiago

A significant amount of foodborne diseases (ETA), occur every year in the world, causing serious problems to the health of the population and in some cases, death. For this reason, food safety is a key concept in establishments where food is stored, prepared and distributed, such as restaurants. The main objective of this research is to determine the impact of the educational level, the training in food safety and the culinary characteristics of the preparations, together with the price in the implementation of GMP. For this reason, data was collected, applying a list of GMP verification and tests to food handlers, to measure their level of training in 70 restaurants in the commune of Santiago and nearby municipalities. The results indicate that 41, 4% of the restaurants inspected, failed the GMP checklist and the average of compliance among the 70 restaurants was 67.7%. The educational level of the manipulators indicates that 45%, have incomplete higher education and the average of scores among all manipulators was 5.6. In the conditioning factors that influence the implementation of GMP, the level of training of the manipulators and the educational level are discarded, since no correlation was found between these variables,(correlation index: 0,05 and 0,108, respectively). Regarding the price of the dish, significant differences were found between the restaurants that approved and did not approve the checklist (p-value: 0.0047). Regarding the incidence of culinary preparations in the implementation of GMP, mexican restaurants have a higher level of compliance and present significant differences with arabic food (p-value: 0, 02) and peruvian food (p-value: 0, 03. Woo-sano es una empresa innovadora en la industria de la alimentación, es precursora en chile en la producción y venta de alimentos elaborados a partir de carne de lombriz californiana (Eisenia Foetida). Las propiedades nutricionales de la carne de lombriz, son entre otras, el alto contenido proteico, bajo porcentaje de colesterol y no tener grasas saturadas. Por otro lado, el proceso de producción es completamente sustentable con niveles muy bajos de impacto ambiental por su bajo consumo de agua, espacio, emisión de gases invernadero y desechos tóxicos. En los últimos años, la industria alimentaria ha priorizado 2 ejes principales, el primero ofrecer alimentos nutritivos, cada vez menos procesados y el segundo ofrecer alimentos de origen vegetal, principalmente por el impacto ambiental y el maltrato animal asociado a la industria alimentaria animal. Actualmente el mercado en chile, esta buscando ofrecer nuevos productos sustitutos a la carne, con nuevos participantes como NotCo y con nuevas líneas de productos ofrecidas por industrias mas establecidas como Agrosuper o PF alimentos. Si bien cada uno de los productos actuales tiene características que le agregan valor, woo-sano viene a competir como un producto natural, con alto valor nutricional y sustentable. A pesar que en chile no esta normalizado el consumo de invertebrados terrestres, de acuerdo a un estudio de realizado la intención de probar el producto es bastante alta, cercana al 62%. Los principales motivos para consumir son los beneficios nutricionales de la carne de lombriz y el bajo impacto ambiental generado al producir los productos derivados. Entre las ventajas competitivas de la empresa, destaca la innovación y la experiencia de los colaboradores. Desde la perspectiva financiera es importante considerar la segmentación realizada, principalmente centrada en el grupo flexitariano ABC1-C2. El crecimiento de ventas y capacidad de ventas permitiría llegar a producir 60 toneladas de carne de lombriz al mes.
