Abstract
El análisis del comportamiento de los consumidores a partir de las actitudes y estructuras de preferencias que presentan consumidores chilenos y chinos en relación a duraznos y nectarines para consumo en fresco constituyó el objetivo principal de este estudio. La fuente principal de información fue una encuesta aplicada a una muestra no probabilística de 90 consumidores chilenos y 78 chinos. A partir de ésta se evaluó características sociodemográficas, hábitos de compra y actitudes de consumo. Paralelamente, se evaluó a través de un panel de degustación una variedad de nectarín pulpa amarilla “4B12” y un durazno tradicional pulpa amarilla “5B64”, ambas no comerciales. El análisis se basó en técnicas de análisis multivariado y univariado. Por medio de análisis cluster se logró identificar 2 segmentos para consumidores chilenos: “Informados” (63,3%) y “Desinteresados” (36,7%). Para los consumidores chinos también se identificaron 2 segmentos: “Tradicionales” (57,5%) y “Modernos” (42,3%). A través de análisis conjunto se establecieron estructuras de preferencias para especie, precio y origen. Los segmentos chilenos priorizan el origen y los segmentos chinos el precio. Para todos los segmentos el producto ideal fue: nectarín 4B12, origen Chile y 400 pesos por kilógramo, consignándose importantes similitudes entre consumidores chilenos y chinos.
 
The analysis of consumer’s behavior in relation to attitudes and structures of preferences related to the fresh consumption of peaches and nectarines that Chilean and Chinese consumers show is the main aim of this study. The main source of information was a survey of a non-probabilistic sample of 90 Chilean consumers and 78 Chinese consumers. Socio-demographic characteristics, buying habits and consumers’ attitudes were assessed in this survey. At the same time, a variety of yellow-fleshed nectarines “4B12” and traditional yellow-fleshed peaches “5B64”, both non-commercial, were assessed by a taste panel. The analysis was based on technique of multivariate and univariate analysis. Through cluster analysis two segments for Chilean consumers were indentified: “the informed” (63,3%) and “the uninterested” (36,7%). For Chinese consumers, there were also two segments identified: “the traditional” (57,5%) and “the modern” (42,3%). After examining the results through conjoint analysis, there were preferences for species, price and origin established. Chilean segments give priority to the origin and Chinese segments give priority to the price. For both segments the ideal product was: nectarine, origin Chile and price 400 Chilean pesos per kilogram, consigning important similarities between Chilean and Chinese consumers.
